About Us

Executive Chef Ron Underwood opened Coyote in the fall of 2008, with a vision of creating Xiamen's Tex-Mex dining experience.  Ron came to live in Xiamen in 2002 and runs another business here, yet his passion and experience in cooking lead to the creation of Coyote Cafe' and Cantina.  Ron's cooking experience goes back many years.  In the very early years cooking with his Mother, then cooking every dinner meal for many years.  Ron was successful in 2 cooking competitions, placing 4th out of 100 in the Main Entree' category.  So, from the influence and training from Ron, Coyote infuses every dish created with an extensive knowledge and passion for perfection. 

A key component to Coyote, is Tiffany Chen.  Tiffany has a unique and born talent for food.  Tiffany can eat food from various cuisine's around the world and be able to  create them in the kitchen.  The key to Coyote was her ability to quickly adapt to the recipes that Ron created, know and recognize the tastes and take control in Coyote's kitchen, to assure consistency in what we serve.

Coyote is committed to serving only the finest foods, made with the freshest ingredients. All of our dishes are made from scratch. Our decor is friendly, inviting and a pleasant place to unwind, relax and enjoy the company of others or merely the surroundings.

Coyote has been quoted by customers from Latin America and Mexico.....each giving a "Hat's Off" in Spanish to say that they were truly impressed by the authentic foods that were being served and felt that they were at home when dining at Coyote.  One has even given Coyote the name "My Spanish Corner"  So, come to visit us....taste the food for yourself, have a few drinks, enjoy our dining atmosphere and make certain to talk with our staff.
