Coyote was established in 2008 under the ownership of Tiffany Chen and her husband Ron Underwood. Tiffany has managed the restaurant during this entire time period as Ron has from the beginning created the menu and recipes and trained the chefs. In more recent years Ron and Tiffany are spending more time at their home located in Florida. During their time in Florida, Tiffany's Brothers; Sam and Skye run Coyote......so, make sure to say Hi to them when you are there.
